FRESH FISH RECIPES ARE ESSENTIAL…

Fresh fish recipes are essential for every cook. Knowledge of the different types, textures and flavors of flesh is endless. A reliable recipe is great for the beginner. It will tell you about the flesh of whatever fish you have chosen, how long to cook it, and other tips and suggestions.
When you purchase fish, ask to smell it. There should only be a beautiful fresh scent. Sea caught fish will smell like the sea and fresh water fish will smell like the fresh water they were caught in. Simple enough right? If you walk up to the fish counter and smell a fishy odor, don’t cook fish that night.
Wild caught fish seem to be better fleshed as they gain good muscular structure. Most pond-raised fish are a bit mushy.
Your fishmonger will know which of the wild varieties are currently available.


The following recipe is very easy, takes little time to prepare and is so flavorful. Enjoy!

Broiled Wild Alaskan Pollack
Serves: 4
Prep. Time: 15 min.
Oven temp: Broil

2lbs. Wild Alaskan Pollack fillets, Cod or White fish. 1 inch thick.
2c. Salad croutons, crushed medium fine
4tbl. Melted butter
2tbl. Fresh herbs, finely chopped and added to melted butter
1 Egg, well beaten
Salt and Pepper to taste

Wash fish, pat dry and put in refrigerator until ready to use.
Beat egg in wide shallow pan.
Put the 2cups of salad croutons into a processor and pulse into medium fine crumbs. Place them in a wide shallow pan.
Melt butter in microwave for approximately 10 seconds or until just melted. Add herbs and give it a stir.
Salt and pepper fish on both sides, brush sides with herbs and melted butter, roll in beaten egg, then roll in crushed croutons.
Place fish onto broiler pan sprayed with no-stick spray.
Place pan 12 to 14 inches from broiler element for approximately 7 minutes per side. Watch carefully so coating doesn’t start to blacken instead of browning.

This recipe works well with most fish. Buy whatever will please your family, whatever is freshest.
