Kids Main Meal Ideas... These are basic kid friendly dinner recipes... NEW! Bratty Joes
This recipe is fun and easy. Serves: 4 Prep Time: 15 to 20 min. In a large skillet combine: 1tablespoon oil 1 package of Bratwursts (kids, squeeze the meat out of the casing into the skillet and break it up like ground beef). 1/4 cup of ketchup 1 tablespoon brown style mustard ( any brand of brown mustard will do) 1/2 teaspoon worchestershire sauce 2 teaspoons of brown sugar 1/2 cup minced or grated onion 1 tablespoon minced or grated garlic 1/2 red bell pepper (or any color) Salt and Pepper to taste (just a little) small pinch of red pepper flakes (optional, but good if added) Brown the crumbled bratwurst till the meat isn't pink anymore, then add the rest of the ingredients. Simmer for 10 to 15 minutes so that all the flavors come together. Serve over your favorite toasted buns or bread. Goes great with a green salad or sliced tomatoes. Baked Marinated Chicken Bits Serves: 2-4 people Preparation time: Variable, no hurry, easy Bake at: An adult puts the dish in a 350 degree oven Bake time: 35 minutes. (Until brown and firm.) Make a simple marinade: ½ cup Soy sauce (low sodium type) ¼ cup Orange juice 1 tablespoon Honey 1 inch chunk of fresh ginger, grated (carefully) 1 clove fresh garlic, grated (carefully too) ¼ of a small onion (yep, grated carefully) 1 teaspoon toasted Sesame oil ¼ teaspoon fresh cracked black pepper ½ teaspoon sea or kosher salt Mix all of the above ingredients and pour into a large zip bag. 2 pounds of Chicken tenders Add the chicken tenders to the marinade and seal the zip bag. Place the bag of chicken in the refrigerator for at least 2 hours. 4 hours would be better. After 2-4 hours, drain the tenders and pat dry (discard the used marinade). Arrange the tenders in a properly sized baking dish, drizzle with a tiny bit of olive oil and rub it all over the tenders. An adult will place the baking dish with the tenders in the oven. Bake them at 350 for 35 minutes or until brown and firm. This chicken has a teriyaki flavor that kids and adults love. The marinade is great and isn’t too difficult for children 5 and up to help assemble. Some young ones may not be able to use the box grater and will need adult help as well as help getting the dish into and out of the oven. The marinade is good on any kind of meat if you don’t like chicken or want to have more meal options. Do remember to discard the marinade that the chicken was in. It’s easy to double the recipe and save half for the table if you like. Remember kids, always ask for help when you need to use the stove or any sharp utensils. Safety first and always. Porcupine Meatballs (thanks to Campbell’s Soup recipes) Serves: 4 Preparation time: 15 to 20 minutes Bake time: 1½ hours Temperature: 350 degrees 1 pound of lean ground beef, turkey, or chicken ½ cup of uncooked rice 1 can low sodium cream of mushroom soup (or any low sodium creamy canned soup) 1 can of water 1 medium sized onion chopped (adult help here?) Mix meat, rice, onion, and 4 tablespoons of the can of soup together in a bowl. Your kids in the kitchen can mix these ingredients together with their freshly washed hands. Roll the mixture into balls about the size of a golf ball or so. Put the finished porcupines into a baking dish of the appropriate size and pour the remaining soup/water mixture over them. Cover with foil and bake at 350 degrees for 1½ hours. An adult will remove the foil cover for the last 15 minutes of baking to brown the porcupines on the tops. Some adult help will be needed, but a lot can be done by the kids. Serve right out of the oven. |
