SIMPLE SALAD RECIPES…


Simple salad recipes are the backbone of the menu. Weather you eat one for lunch or the evening meal, there is nothing that beats a well put together salad.
We think that salads can be as flavorful and elegant as any other meal component.
We love the salad recipe below. It makes such a beautiful presentation. It almost wouldn’t even have to taste good it looks so great, but it does. It is one of the best fresh salads you will have tried. Honestly.


Betty’s Confetti Salad
Serves: 3 to 5 people
Prep time: 30-35 minutes


4-6 c.    Fresh vegetables cut into smaller bite size pieces.
    (Use only firm veggies that won’t mush or add liquid to the salad)
1c.    Italian dressing, creamy style or cheese garlic style, or your family favorite.

Place cut veggies into a gallon size bag and pour on the dressing. Seal the bag and shake. Put the bag into the refrigerator for 2 to 4 hours before serving. Give the bag a shake and a turn every so often.

This is a great way to use all of those vegetables that may not see the salad bowl normally. I like to use every firm colorful thing I can find. It makes a beautiful and appetizing presentation at the table. Put the salad in your prettiest bowl and no one will be able to resist.

This is a favorite of ours to take to potluck. I always have to give the recipe several times when I take this salad. Thankfully it’s so easy to make it doesn’t require much explanation. It takes advantage of the seasons. Any firm veggie that is tasty and colorful will work.

Another thing that can be done this way is to make a jar of red onions in your favorite italian style
dressing. Slice the onions in rings about ¼ inch thick and place them in a large jar with a lid. Pour dressing over them till they are covered. Let them marinate in the refrigerator over night. They keep for weeks and can be used whenever you want. The onions are so sweet and good over salad, on sandwiches (after draining on a paper towel), and with sliced tomato. The dressing is good by it’s self on salad greens too.  There are so many ways and veggies to prepare this way. Try one of your favorite vegetables this way.

NEW!    Apple-Bleu Cheese Slaw with Bacon crumbles

1 Small head of cabbage shredded (about 4 cups)
1 Large or 2 medium apples ( Fuji or other medium sweet apple) grated. Squeeze out moisture and discard the juice.
1/4 Small onion grated. Squeeze out moisture and discard the juice.
1 Cup of Bleu Cheese dressing, whatever one the family likes. Ranch can be substituted and is also very tasty.
1 Tsp. vinegar, any type.
3 Tsp. honey, any type.
Sea salt and fresh cracked pepper to taste.

*1/2 Cup of Bleu cheese crumbles for topping
*1/4 Cup of bacon crumbles for topping

Combine all the ingredients together with the exception of the last two *. Mix well and refrigerate for about 1 hour. When the salad is served, add the last two ingredients** and you will have a very happy
family. Crisp, sweet/sour and wonderful.
